Our client is an award winning and leading independent provider of specialist neurological care and neuro-rehabilitation for people with physical illnesses, restricted mobility and difficult and diverse behaviours as a result of neurological conditions.

Position: Head Chef
Location: Milton Keynes
Salary: £Circa £27,000per annum
Hours / Shift Pattern: 40 hours per week, Monday to Friday 8am – 5pm with elements of flexibility required (to cover occasional evenings or weekends)

ROLE:
The Head Chef will assist with management of the day-to-day provision of Catering services, ensuring strict food hygiene standards the Health & Safety of the kitchen areas and catering staff are maintained.

RESPONSIBILITIES:
a) Provide leadership and direction to the Catering Team.
b) Ensure the Company’s Staff Appraisal Scheme is conducted as per the Company policy. Attend regular management meetings as required.
c) Carry out regular monthly audits of the Catering service provision, ensuring standards are maintained.
d) Ensure compliance with their Catering policy and Procedure.
e) Ensure the catering service meets the nutritional and dietary needs of the residents with regard to personal preferences and allergies, in accordance with Company policies and procedures.
f) Assist the Catering Manager to produce four weekly menu plans providing a varied diet within budgetary restraints. Assist in the preparation of a costed rolling menu programme for them.
g) Ensure the maintenance and servicing of the catering equipment, ensuring full, up to date records are maintained. Ensure all statutory standards in relation to the catering services are met in full, and to keep up to date appropriate records in the correct files.
h) Assist with the coordination of holidays and management of an on-call rota for all catering department to deal with out of hours emergencies. Maintain sufficient stocks of dry, chilled and frozen goods to meet the requirements of the menu plan.
i) Carry out audits of catering areas to ensure compliance with HACCP and other legislation, good stock management, including labelling and rotation of stock reporting to the Catering Manager.
j) Manage all delegated budgets ensuring that targets are met.
k) Follow Financial Standing Instructions.
l) Undertake such other duties as may be mutually determined from time to time that may fall within the scope of the post-holder’s capabilities and experience.
m) Ensure a member of the catering team attends the Nursing Home weekly diary meetings.

ESSENTIAL SKILLS / EXPERIENCE:
a) Experience in a Head Chef role with Line Management responsibility.
b) Complete the appropriate Health & Safety, Food Hygiene and HACCP checks and ensure the maintenance of the relevant forms relating to those checks.
c) Complete documentation relating to Health and Safety, HACCP, Food Safety and Manual Handling. Making recommendations to the Catering Manager as required.
d) To be aware of the legal requirements of health and safety legislation, including but not limited to the requirements of: Health and Safety at Work Act 1974, Food Safety act 1990, Food Premises (Registration) Regs 1991, Food Safety (General Food Hygiene) Regs 1995, Food Safety (Temperature Control) Regs 1995.
e) Having particular regard for the following practices: Fire Prevention, Prevention of back injuries, COSHH, Food Handling, Prevention of Food contamination.

DESIRABLE SKILLS / EXPERIENCE:
a) Relevant experience within a healthcare background
