Salary: £30,000 – £36,000 per year
This outstanding opportunity has arisen at the world famous holiday park in Kent that is ‘The Foxhunter Park’. The Foxhunter Park has long been synonymous with five star caravan holidays. In 2015 a brand new bar, club and restaurant was launched taking the park to even higher levels of quality and luxury. The park also has a brand new Lodge development ‘Willow Brook’ that when officially launched in 2016 will be one of the finest developments of its kind in the UK. The park is predominately owner occupied, so most of the guests own their own caravans and come down for weekends and long breaks.
The role is to run the bar and restaurant, working closely with the club host, head chef and owners to deliver five star products and service. Maximising turnover and profit through building strong relationships with our customers will be the key to the success of this role. We want to take the best from other five star establishments and adapt them to make them work for our unique holiday park.
This role would suit someone who has run a gastro pub or similar high street establishment.
The Business End:
* Taking responsibility for the business performance of the bar and restaurant.
* Analysing and planning restaurant levels and profitability.
* Organising marketing activities, such as promotional events and discount schemes.
* Preparing reports at the end of the shift/week, including staff control, food control and
sales.
* Creating and executing plans for department sales, profit and staff development.
Planning and coordinating menus with the chef team.
Front-of-house:
* Coordinating the entire operation of the bar & restaurant during scheduled shifts.
* Managing staff and providing them with feedback.
* Responding to customer complaints.
* Ensuring that all employees adhere to the company’s uniform standards.
* Meeting and greeting customers and organising table reservations.
* Advising customers on menu, drinks, specials and wine choices.
* Recruiting, training and motivating staff.
* Organising and supervising the shifts of kitchen, waiting and cleaning staff.
Housekeeping:
* Maintaining high standards of quality control, hygiene, and health and safety.
* Checking stock levels and ordering supplies.
* Preparing cash drawers and providing petty cash as required.
* Helping in any area of the restaurant when circumstances dictate.
* Cash control, reconciliation and banking.
